Sherva is very famous in Hyderabad. It is a gravy, which is served as a side dish for Biryani’s. Some people do not like adding raita or sherva while eating Biryani, and want to enjoy the original taste. But some Biryanis or Pulao like Murg Kheema Pulao(which I will be posting soon) need a side dish like this.
Some versions also have ground meat, but today’s recipe is a vegetarian one which goes well with both veg and non-veg Biryani’s or Pulao’s
This is very easy to make and takes hardly 20 mins.
What you need:
Onion : 1, diced
Tomatoes : 2, quartered
Green Chillies : 2 or 3, chopped ,depending on your taste buds.
Ginger-Garlic Paste : 1 Tbsp
Cloves : 4
Cinnamon : 2 inch
Bay leaves : 2 or 3
Turmeric Powder : 1/2 tsp
Corriander Powder : 1 tsp
Cumin powder : 1 tsp
Garam Masala : 1 tsp
Red Chilli Powder : 1 tsp
Salt to taste
Curd : 1/2 cup, whisk lightly with a fork till smooth
Oil : 1 Tbsp + 1 Tbsp
Chopped coriander leaves : a handful
Roast and Grind to Paste :
Peanuts : 2 Tbsp
Sesame seeds : 1 tsp
Shredded coconut : 1 tsp
- Heat 1 Tbsp of oil in a pan and add onion, green chilli, ginger garlic paste and tomatoes.
- Cook till tomatoes are mushy and done. Keep aside to cool. And grind to coarse paste.
- Heat an other 1 tbsp oil in a heavy bottomed vessel.
- Add cloves, cinnamon and bay leaves.
- Once the spices start to sizzle, add onion-tomato paste.
- Add all the masala powders from Turmeric to salt.
- Fry well for few mins.
- Add in curd 1 Tbsp at a time, mixing well each time.
- Add 1 cup of water, if the consistency is thick.
- Now add the ground paste.
- Cover and cook on low heat for few mins.
- Add coriander leaves. Turn off heat.
- Serve with Pulao or Biryani.

I love the idea of this sauce, though I have never had them. When I make biriyani next time I will make this sauce, as my hubby and daughter are not huge fan of raita, especially daughter as i put raw onions to it .
