I am back from a wonderful trip to India. This time it was a long 2 month trip, I planned so many things to do, so many recipes to write down from aunts, grand mom and friends, I promised to cook all the fav dishes of my friend T, I wanted to do so much because I had two full months. But the time flew with out my notice, I had no time for anything. The last week of my trip I wanted to think hard about what I did all these days, but no.. I could not recall how the days went by. The only thing which I did useful was buy some props for my blog 😛
Hyderabad has become even busier now. More traffic, more Malls, more people, and more places to hangout. I love this hustle bustle of this city.
I visited the big industrial exhibition this time, after many years, loved the shopping, the food and the big giant wheel 🙂 . The Shilparamam crafts exhibition was even more big and better than before…. I wanted to buy tons of stuff, how many times did I think if only my luggage allowance was 100 Kgs instead of 30 🙂
After coming back last week, it was like starting new again – cooking, cleaning and washing.. phew… and till I get over my homesickness and holiday hangover, I planned to keep my lunch and dinner menu’s simple.
This recipe is very quick and simple to make and is very comforting served hot with hot steaming rice!!!
What you need :
Oil : 2 or 3 Tbsp
Potatoes : around 6 0r 7, medium sized, boiled peeled and cut into cubes
Onion : 1, big, sliced thin
Turmeric : 1/2 tsp
Salt : to taste
Curry leaves : a few
Green Chillies : 5 or 6, increase or decrease depending on the taste
Shredded Coconut : 1/2 cup, fresh or dried
For tempering :
Dried Red chilli : 1 or 2
Split urad dal : 1 tsp
Mustard seeds : 1 tsp
Cumin Seeds : 1 tsp
Curry leaves : a few
- Take oil in a pan, and once hot, add all ingredients under tempering one by one.
- Once the mustard seeds start to splutter, add onions and turmeric.
- Fry till golden brown, add the ground coconut mixture.
- Fry well till the raw smell disappears.
- Add the potatoes and salt.
- Mix well. Fry on medium heat for about 5 mins. Do not mix vigorously and make the potatoes mushy.
- Serve hot with hot steaming rice.
